Ferrari does a great job with its Chardonnay-based sparkling wines. The 2010 Trento Metodo Classico Perlé Brut is a prime example. The winery's signature style includes more creaminess in terms of texture and yeasty notes of fresh baguette on the nose. You get both here with balanced intensity. Disgorged in early 2017, this is a soft and sophisticated sparkler that has the textural finesse to pair with oysters or raw sea urchin roe. 2017 - 2028
